Transcript HOUSTON VOICE / AUGUST 16, 1996 27 Here's a green bean and tomato dish. It's easy and also a nice compliment to beef. It also gives you a break from regular green beans. Green Beans with Tomato 1 pound green beans, washed, trimmed and cut diagonally into 1-inch pieces 1/4 C. butter or margarine 1/4 C. finely chopped onion 1 small clove garlic, minced 1 Tbs. brown sugar 1 Tbs. lemon juice 1/2 tsp. salt 1/2 tsp. dried oregano, crushed 1/8 tsp. pepper 2 medium ripe tomatoes, cut up In large saucepan, cook the green beans in a small amount of boiling salted water for 18 to 20 minutes or until crisp tender. Drain the green beans and set aside, keeping Meanwhile, in a large skillet, melt the butter of mart cook and stir over medium low heat for 3 minutes. i. Add the onion and garlic. tgano and pepper Add the tomatoes. Heat Stir in the brown sugar, lemon juice, salt, through, stirring occasionally. Add the tomato mixture to the cooked, drained beans. Gently toss Transfer the mixture to a warm serving dish and serve immediately. If you are not a green bean lover, try using this recipe with other varieties of beans, and you could afso use plum (Roma) tomatoes, or even yellow tomatoes (if you can find them) for a less acidic dish. Remember to always pack the brown sugar to equal the amount called for in a recipe (of coarse unless it calls for it to be loose). I did not cook the beans in water, I steamed them for about 7 to 8 minutes. Steaming the beans, I feel, keeps them more crisp tender. You won't want mushy beans for this dish. UNTIL NEXT WE EAT!
