RESEARCH & DEVELOPMENT With the nation's food service industry experi encing a continuing series of important tech nological advances, one of the most significan factors underlying the steady growth of Marriott Hot Shoppes has been the outstanding per formance of the Research and Quality Contro Section of our Merchandising Department Charged with the responsibility of establishing sound, progressive technological patterns for the long-range growth of the company, as well as setting and maintaining quality standards for all divisions, the work of our Research Section has a direct impact on every phase of operation. Recent major R&D projects include: • Establishment of a pilot frozen food plant, to expand our experimental work with new frozen food techniques; including new freezing methods, new packaging techniques and new reconstitution procedures. • Establishment of a Quality Control Section, combined with development of a new, more effective method for procurement testing, to help insure the highest possible food standards in all divisions. • Establishment of a bacteriological laboratory, headed by a registered bacteriologist, to provide further scientific quality safeguards. Research and Development also comprises an important part of the work in our Architecture and Construction Department. This department's professional staff has developed new prototype designs and plans for both service restaurants and cafeterias. It is responsible for the layout and development of modern and efficient kitchen equipment that is both geared to newly emerging food handling technologies and necessary to keep pace with our increasing volume of business. In addition, this department is working on refinements in our Hot Shoppes Jr. designs as well as the designing and supervision of construction of the new Marriott Motor Hotels in Atlanta, Georgia and- Saddle Brook, New Jersey, Test Kitchen analyst testing density of new sauce.
